Yesterday was cold, dark, and rainy. It was really dismal. I’m not a huge fan of cold rain in New England in general, but especially not after Daylight Savings Time is over and it’s dark. So, when I was making G1′s lunch, I wanted something summery and bright. When she asked for a salad, that made it easy.

Summery fall lunchToday G1 didn’t want anything in her Thermos. I was confused. In her Easy Lunchbox she has, on the left, a salad with tofu. I used these vegetable cutters to make a sun in the top left, then cut flowers out of the middle of Persian cucumbers and inserted flowers cut from colored bell peppers into the openings. Then I cut bunnies and butterflies out of tofu, and decorated them with food-safe markers (as an aside, I had bought a cheaper set of food markers when I started bento-ing, but they didn’t work very well. These are well worth the difference in price, plus they have more colors). I used two bunny food picks, a mushroom, and a bee to finish making a summer scene. At the top right is some canned pineapple, with a bunny, a ladybug, and a flower as decorations. Resting along the back she has a she has a Chebe gluten-free breadstick.

And, at the bottom right she has one of the cupcakes she decorated with her church group on Tuesday. What a fun lunch – the perfect antidote to November in New England!
